Night shift at the bakery (open cloze text)

Night shift at the bakery

Every night at eleven o'clock, while most of the town is asleep, Tomasz Wilk unlocks the back door of Crumb & Co. and switches on the ovens. He has worked at the bakery [1] almost six years, and he says he no longer finds the hours strange. That was not always the case. 'At first I could hardly sleep during the day,' he explains. 'No matter how tired I felt, I just lay there listening to the traffic.' Now he actually prefers working nights. 'Nobody phones me, nobody sends emails, and by the time the first customers arrive, the shelves are full of bread I've made myself. You have to be happy with your own company, though. If you need to chat to people all day, you'd be bored here.'
